Rise and Shine, Honey! It's Breakfast Time!

Using apples, store-bought waffles, pre-cooked ham and the sweet taste of honey, this simple low-fat breakfast "sandwich" is a snap to make, even on a weekday morning. It takes only minutes to caramelize the apples in honey and butter. Then simply serve with ham over the toasted waffles and top with a delicious honey-apple syrup.

With September, National Honey Month, occurring during the fall apple harvest, it's the ideal time to give credit where a considerable amount is due: to our nation's honey bees. Everyone knows we wouldn't have honey if it weren't for honey bees, but what about apples, nuts, berries and melons? Without the pollinating prowess of millions of honey bees we wouldn't have the same quality and yearly abundance of more than 90 food crops we now enjoy.

It's mind-boggling but true -- industrious honey bees work hard to produce approximately 300 varieties of honey in the United States. And no two varieties are exactly alike. The color and flavor of each depends on the floral source tapped by the bees. In general, lighter-colored honeys have a milder taste while darker-colored honeys tend to have a bolder flavor. With so many choices available, experimenting with different honey varieties is not only easy, but each lends a unique flavor to any recipe you prepare.

Breakfast Waffle - Club Sandwich
With Honey-Apple Syrup

3/4 cup honey, divided
1/4 cup apple juice
2 Tablespoons butter or margarine
2 crisp apples, cored and sliced
8 frozen waffles, toasted
8 thin ham slices

To make syrup, place 1/2 cup honey and apple juice in small saucepan over medium heat; heat through. Set aside; keep warm. Melt butter with remaining 1/4 cup honey in large non-stick skillet over medium-high heat. Add apples and cook, stirring constantly, until apples are lightly caramelized and crisp-tender, about 4 minutes. For each serving, place 2 waffles on a plate, slightly overlapping. Top each waffle with a slice of ham. Top with 1/4 of apple mixture and drizzle 1/4 of honey-apple syrup. Serve hot.
