Trade Secrets From "Baking With Julia"

- When your recipe calls for softened butter, place the butter between two sheets of waxed paper and hit it a few times with a rolling pin.
- When making pastry dough, cut the cold butter into the flour until the butter pieces range in size from bread crumbs to tiny peas. The small pieces will make the dough tender, the large pieces make it flaky.
- For a great cake with a soft and tender crumb, make sure to beat the butter and sugar together until they're light and satiny. When you rub a bit between your fingers, the mixture should feel smooth.
- When setting up for a day of baking, keep a bowl of softened butter and a pastry brush close at hand to make fast work of buttering cooking sheets and cake pans.
