January Is National Oatmeal Month -- Some Like It Hot, Some Like It Cold


Oh, those versatile oats! Last year during National Oatmeal Month, we stocked our pantries with 24 million pounds of Quaker oatmeal, up 20 percent from the previous year.

While most of us think of oatmeal as a hearty and wholesome hot cereal, this nutritious whole grain with its naturally nutty flavor also makes a great-tasting homemade granola when you'd rather start your day with a cold cereal. Fruit & Honey Granola offers all the goodness of oats -- fiber, vitamins and minerals -- in combination with dried fruit and crunchy pecans. A honey-cinnamon syrup flavors each bite.

For those on the go, the granola can be "bagged up" in individual portions for dashboard or desktop dining. It also makes a delicious and nutritious snack, anytime. Stored tightly covered, it will stay fresh for several weeks.

FRUIT & HONEY GRANOLA

11 servings

3-1/2 cups Quaker oats (quick or old fashioned, uncooked)
1/2 cup honey
1/3 cup coarsely chopped pecans (optional)
1/4 cup (1/2 stick) margarine, melted
1 teaspoon vanilla
1/2 teaspoon ground cinnamon
1/4 teaspoon salt (optional)
One 6-ounce package diced dried mixed fruit (about
1-1/3 cups)

Heat oven to 350 degrees F. Combine all ingredients except fruit in large bowl; mix well. Spread evenly in 15x10-inch jelly roll pan. Bake 30 to 35 minutes or until golden brown, stirring after 10 minutes. Cool completely. Stir in fruit. Store tightly covered in a cool dry cabinet up to 3 weeks.
